Chicken Adobo Recipes

How to Make Chicken Adobo

1. The chicken is being marinated

Take two garlic cloves and smash them. Combine this with 4 tablespoons soy sauce, 5 tablespoons vinegar, 2 teaspoons brown sugar, and 14 teaspoon ground black pepper in a mixing bowl. Instructions:


1. Marinate the Chicken:

   - In a large mixing bowl, combine the chicken pieces, minced garlic, sliced onion, bay leaves, and black peppercorns. Mix thoroughly to ensure that the ingredients are evenly distributed.


2. Prepare the Adobo Sauce:

   - In a separate bowl, combine the soy sauce, vinegar, and water to make the adobo sauce. You can adjust the amount of soy sauce and vinegar to your preference. Add a pinch of sugar to the sauce if you want your adobo to be sweeter.


3. Marinate the Chicken:

   - Pour the adobo sauce over the chicken mixture. Make sure the chicken is completely submerged in the sauce. Marinate for 30 minutes to an hour, or overnight in the refrigerator for even more flavor.


4. Cook the Chicken Adobo:

   - Heat the cooking oil in a big, deep pan or pot over medium-high heat.

   - Place the chicken in the heated pan after removing it from the marinade. Set aside the marinade for later use.

   - Sear the chicken on both sides until lightly browned, approximately 5-7 minutes.


5. Simmer the Adobo:

   - Pour the reserved marinade over the pan-seared chicken. If necessary, add a little extra water to ensure the chicken is mostly immersed.

   - Bring the mixture to a boil, then reduce to a low heat. Allow the Chicken Adobo to simmer for 30-40 minutes, or until the chicken is soft and cooked through. Every now and then, give it a good stir.


6. Adjust Seasoning:

   - To balance the tastes, taste the Chicken Adobo and adjust the spice with salt and sugar as needed.
