Ingredients:

- 4 mahi-mahi fillets, about 6-8 ounces each

- 1-2 tablespoons olive oil (for pan-frying)
- Optional garnish: chopped green onions or fresh cilantro
Instructions:
1. Prepare the Sweet and Sour Sauce:
- Combine the ketchup, white vinegar, granulated sugar, soy sauce, and cornstarch in a mixing dish. To make the sweet and sour sauce, combine all of the ingredients.
2. Cook the Sauce:
- In a saucepan, heat 1-2 tablespoons of vegetable oil over medium heat.
- To the pot, add the chopped bell peppers, pineapple, red onion, minced garlic, and grated ginger. Sauté for a few minutes, or until the veggies are soft and fragrant.
- Pour the sweet and sour sauce mixture over the sautéed vegetables.
- Bring the sauce to a boil and cook for 5-7 minutes, or until it thickens and turns glossy.
- Season the sauce with salt and black pepper to taste. Adjust the sweetness or tanginess if needed by adding more sugar or vinegar.
3. Prepare the Mahi Mahi:
- Using paper towels, pat the mahi-mahi fillets dry. This helps the sauce adhere to the fish better.
- Season the fillets with salt and black pepper.
4. Cook the Mahi Mahi:
- In a large skillet, heat 1-2 tablespoons of olive oil over medium-high heat.
- Add the mahi-mahi fillets to the hot skillet.
- Cook the fillets for 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. The cooking time will vary according to the thickness of the fillets.
