Shogayaki Recipes



Shogayaki is a famous Japanese meal made of thinly sliced pork or beef sautéed with ginger and a savory-sweet sauce. "Shogayaki" literally translates to "ginger fry" in Japanese, emphasizing the prominence of ginger in this meal. It's a tasty and quick-to-prepare dinner popular in Japanese cuisine. Shogayaki is made by stir-frying the beef in a hot skillet until it is browned and cooked thoroughly. A sauce is made in a separate bowl by combining ginger, soy sauce, mirin, and sugar. This sauce is then poured to the pan with the meat and cooked until thickened and coating the meat.




Here's a basic recipe for making Pork Shogayaki:




Ingredients:





- 1/2 pound (about 225g) thinly sliced pork (you can use pork loin or pork belly)

- 1-2 inches of fresh ginger, peeled and julienned

- 1 small onion, thinly sliced

- 2 tablespoons soy sauce

- 2 tablespoons sake (Japanese rice wine)

- 2 tablespoons mirin (sweet rice wine)

- 1 teaspoon sugar

- 1 tablespoon vegetable oil

- Salt and black pepper, to taste

- Steamed rice, for serving

- Chopped green onions or toasted sesame seeds for garnish (optional)





Instructions:





1. Prepare the Pork:

   - If the pork slices are large, cut them into smaller, bite-sized pieces.

   - Season the pork with salt and black pepper to taste.


2. Make the Shogayaki Sauce:

   - To make the Shogayaki sauce, combine the soy sauce, sake, mirin, and sugar in a small bowl. Set it aside for now.


3. Heat the Oil:

   - Heat the vegetable oil in a big skillet or frying pan over medium-high heat.


4. Sauté the Ginger and Onion:

   - To the heated pan, add the julienned ginger and sliced onion. Sauté for a few minutes, or until the ginger gets aromatic and the onion begins to soften.


5. Cook the Pork:

   - Add the seasoned pork, ginger, and onion to the pan. Stir-fry the pork for 2-3 minutes, or until it's no longer pink and has some color.


6. Add the Shogayaki Sauce:

   - Shogayaki sauce should be poured over the cooked pork.

   - Stir-fry for another 2-3 minutes, allowing the sauce to coat the pork evenly and slightly thicken.


7. Serve:

   - Remove the skillet from the heat after the pork is cooked through and the sauce is evenly spread.


8. Garnish and Serve:

   - Shogayaki should be served hot over steamed rice.

   - To add flavor and texture, top with chopped green onions or toasted sesame seeds.
