Sarciadong Isda Recipes

For this experiment, I chose tilapia because it was the only fresh fish available at the local store. I don't dislike tilapia (in fact, I use it in most of our fish recipes), but I believe that using saltwater fish for this recipe is preferable. I suppose this is one of the drawbacks of living in the Midwest, where the ocean is hundreds of miles away. This is just my opinion; there are no certain sorts of fish necessary for this dish, so use whichever fish you choose.
Here's a basic recipe for preparing Sarciadong Isda:
Ingredients:
- 2 fish steaks or fillets (tilapia, bangus, or any firm white fish)
- Cooking oil for frying
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 1 red bell pepper, sliced into strips
- 1 green bell pepper, sliced into strips
- 1/2 cup tomato sauce
- 1/2 cup water or fish stock
- 2 tablespoons vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- Fresh parsley or green onions for garnish (optional)
- Steamed rice, for serving
Instructions:
1. Fry the Fish:
- Heat enough cooking oil in a big skillet or frying pan over medium-high heat to fry the fish. Fry the fish steaks or fillets on both sides until golden brown. Take the fried fish out of the pan and set it aside.
2. Make the Sauce:
- Sauté the chopped onion and minced garlic in the same skillet until the onion becomes transparent.
- To the pan, add the diced tomatoes, red bell pepper, and green bell pepper. Cook until the veggies are soft.
3. Add Tomato Sauce and Water:
- Pour in the tomato sauce, followed by the water or fish stock. Stir well to blend, then set aside for a few minutes to let the sauce to develop.
4. Season:
- Season with vinegar, sugar, salt, and pepper to taste. Season with salt and pepper to taste.
5. Simmer and Combine:
- Allow the sauce to boil for a few minutes more, until it thickens slightly and the flavors blend.
6. Serve Sarciadong Isda:
- Serve the fried fish on a plate. Pour the tomato-vegetable sauce over the fish.

- If desired, garnish Sarciadong Isda with fresh parsley or green onions.
- Serve immediately with steaming rice.
